My old boss back in Guam asked for a recipe, so I decided to show pictures in addition to the steps. Here are the pics for the Chicken & Spinach Pesto.
Gotta have garlic and onions.

I found out later that grilling the chicken rather than stir frying would have a better texture. I'll be sure to do that next time I make this.

Mmmm, mushrooms.

Adding baby spinach and mushrooms to the mix puts some water in the pot to take out any stuff sticking to the bottom. After everything's cooked, add the pesto sauce.

I used rotelle for the pasta.

Time to stir fry everything together. Non-stick pans are best.

After some stir frying, it's done.
